Between two custom cake orders before Valentine’s Day and a whole batch of red velvet mini cakes heading out the door for the holiday, it’s safe to say this classic flavor was the real MVP of February at Happy Hippo Bakery.

Red velvet is one of those flavors people either love or feel unsure about but once they try it made from scratch, with real cocoa and just the right balance of sweet and tangy cream cheese frosting? They get it.
My red velvet cake starts with a rich but tender cocoa-kissed base and is layered with homemade vanilla bean cream cheese frosting , silky, slightly tangy, and not too sweet. I like to think of it as the cozy cousin of chocolate cake with a little extra flair.
