Letting my little hippo get messy is one of my favorite weekend activities and you just know the main way we do that is through baking together! Saturday mornings are for special breakfasts and Hayes's favorite special breakfast right now is blueberry banana pancakes.
These blueberry banana pancakes are so yummy, low on sugar, and are incredibly easy to throw together - even your little one can help! They're obviously great for breakfast for just about anyone but they also make great snacks for baby led weaning for even the littlest hippos! Just make sure to smash the blueberries really well for new eaters!
Ingredients
AP Flour | 1 cup |
Sugar | 1 tbsp |
Baking Powder | 2 tsp |
Salt | 1/4 tsp |
Cinnamon | 1 tbsp |
Egg | 1 Egg |
Milk of choice | 1 cup |
Vegetable oil | 2 tbsp |
Bananas | 2 ripe bananas, mashed |
Vanilla Extract | 1 tsp |
Blueberries | 1 cup |
Mix your dry ingredients, including the sugar (Hayes loves whisking dry ingredients together!). Combine the wet ingredients, including your vanilla extract (mashing the banana was Hayes's favorite!). Add the dry ingredients to the wet ingredients. The batter is pretty wet and lumpy but trust the process!
In a griddle or frying pan over medium heat, pour batter into 2-3" pancakes (roughly 1/4 cup). Add 2-3 blueberries to each pancake as they cook. Cook about 3-5 minutes per side.
